Salami and red wine risotto

A few years ago, we learnt that risotto had to be made with arborio rice. Since then, other varieties such as carnaroli and vialone nano have come along and things are no longer quite so simple.

There are, in fact, hundreds of different varieties of risotto rice. I think it is best to choose a superfino such as arborio or carnaroli: they take longer to cook than others but are slower to turn to pudding if slightly overcooked. If using a new type, be extra vigilant in checking when they are cooked.

Ingredients


125g Italian salami, in a piece
1 onion
1 large carrot
1 stick of celery
100g butter
450g risotto rice
350ml Dolcetto or Barbera (red wine from Piedmont)
3 bay leaves
700ml chicken stock
Salt and pepper
100g fresh grated Parmesan

Method
● Peel the skin from the salami and cut it into small dice, definitely no more than half a centimetre square. Peel the onion and carrot and cut them, with the celery, into dice every bit as small as the celery. Melt half the butter in a heavy sauce pan and add the salami. Turn up the heat and fry the meat until it’s crisp and has rendered much of its fat. Add the vegetables and stew on the same lively heat, turning regularly until they begin to soften. Bring the stock to the boil in a separate pan.

● Add the rice to the vegetables, season it well with salt and milled pepper and turn it in the mixture until every grain is well coated in the butter and fat from the salami. Pour in all the red wine, add the bay leaves and stir well. Turn down the heat and let the liquid come gently to the boil. Let it simmer slowly, stirring it occasionally until the wine has been absorbed and the rice starts to stick. Now start to incorporate the hot stock ladle by ladle, stirring as you do so. Continue, adding a little more stock every three minutes or so, until the rice is cooked to your taste. When the whole is completely amalgamated, serve forthwith with plenty of Parmesan.

FreeRice offers participants multiple-choice definitions to the meaning of a word, with each correct click generating 10 grains of rice for the WFP. The brainchild of American online fund-raising pioneer John Breen, the Web site FreeRice.com relies on advertising revenue to underwrite its rice campaign. "The site is a viral marketing success story with more than 1 billion grains of rice donated in just one month to help tackle hunger worldwide," said Josette Sheeran, executive director of the Rome-based WFP. On October 7, the day it was launched, just 830 grains of rice were donated. But the Internet community quickly caught on, and on November 8 alone 77 million grains were donated--equivalent to more than 7 million correct clicks."

RED FLAGS SHOULD BE GOING UP OVER PUTIN’S ANGER

 

The old KGB fox and current President of Russia flamed Secretary of State Rice and Secretary of Defense Gates in negotiations to find a common ground on a missile protection system the US is offering to build in Poland and the Czech Republic as a counter measure to a potential Iranian missile attack.

 

The quickly fading ally Russia views the Missile Defense Umbrella as a threat to Russian missiles, meaning in old Cold War terminology the erasing of the Mutually Assured Destruction deterrent between Russia and Europe/America.

 

I mean Putin is furious! Now this begs the question: Why would a Missile Defense Umbrella which potentially even aid in protecting Russia from long range Iranian missile infuriate Putin?

 

Let us speculate a little.

 

Could it be that Russia is clandestinely aiding Iran build a nuclear arsenal with some kind of secret mutual defense pact? I mean Russia openly has provided nuclear technology to Iran. Russia has provided military arms to Iran. Russia is back to pushing the envelope on British air space. Russia is attempting to control any resources in the Arctic North Pole region.

 

Do all these act sound or look like the practice of a Western allies? Is Russian democracy based on the Western model devolving back to Russian despotism?

 

I am just speculating now; however there is the appearance of a Russian/Iranian secret pact that a Missile Defense Umbrella might just screw up.

 

Then there is on last question for you readers to speculate on an answer: What is Chinas agenda in regard to Russias antics and Irans increasing belligerence as the West allows Iran to become a nuclear power? Hmm ???
