Pancakes @ MindSay

This morning around 3 am I’m sitting in the kitchen on the ‘puter when I see a white face in the window. I almost pooped in my skivvies.

It was Roberts’ nephew, the one I’m warned to stay away from. He was with a girl and they both had had two beers.  They’d walked from a party and didn’t want to drive home that way which was smart.

Nephew: muncle here?

Me: your what!?  *of course I knew what he’d said*

Nephew: myeeee *looks up as though he’s trying to remember what he’d said*

So we hang in the kitchen talking and laughing. His girlfriend was really sweet.

Girl: wanna smoke…I’ve got some hmm hmm

Me: just a little *take two hits and I am a laughing fool*

They stayed over.

I couldn’t sleep so around 7am the nephew and I went to get his car. He took me to work out the horse for about an hour. We came back home, I took a quick nap and when I awoke his girlfriend was in the kitchen talking with mel and savio while mel was making breakfast.

I logged onto mindsay.

When Anthony and Robert came down to breakfast Robert was a little miffed that his nephew had taken me riding.

Robert: well you’re nineteen and shouldn’t be drinking anyway

Nephew: well at least I didn’t drive this time and i only had 2 beers!

Melina: who wants pancakes? *diffusing an argument*

Everyone said they did so we had pancakes and then the nephew and the Watcher started talking about football. Robert joined in the conversation and he and the nephew laughed and talked. Everything was fine.

The girlfriend asked to shower in my room and borrow some clothes. When we were in my room she said what I knew she was going to say:

Girl: Anthony is fucking hot…I cannot believe he’s gay

Me: well don’t say he’s a waste as a gay cuz I’ll deck you *I smile*

Girl: *laughs* no…I don’t think it’s a waste…I just can’t believe he’s gay but the good looking ones always are..

Me: of course that’s silly….I think George Clooney is very good looking and he’s not gay….i kinda  wanna make him my husband but people without out top lips really freak me out…that is his only flaw….i know…shallow of me

Girl: well don’t ever come to one of our family affairs as most of my moms’ side are devoid of top lips

Me: yuck!

Girl: *laughs* I like you…your cool

Me: I like you too

robert the nephew and his girlfriend went home.

I then IM-ed with Fabby.

 

I scraped my arm on a tree and peroxide it while Fabby and I chatted…she didn’t even know what peroxide was.

What happens when I'm given a paper placemat at a restaurant? I doodle of course!

I was sick this past week so that would account for my lack of posts. :P

I smell pancakes but I'm the only one home....

I wish someone WAS making pancakes. For me.

I have never seen instant results when dieting before... my normal pattern of weight loss would sometimes be several weeks before I would see a flush of weight, for example.. week 1-0 lbs.. week 2-0 lbs week 3-6 lbs... then repeat pattern. It was flusterating. And it took me like 8 months to take off 40 lbs...

 

I started to avoid breads and pastas on  Monday.  Wednesday I went full on into low carbing, looking up some old recipes, I will share them here if anyone is interested.

 

Drum roll ::::::::: As of today I have lost 9 oops 7 lbs! :::::::::::: (can't do math very well apparently..lol!)

 

Cool. I know that won't continue, but what a nice start, one that I am not used to having that kind of encouragement. What is making my body react differently this time? Maybe that it's been 2 years since I low carb'd and dieted and my body is out of that yo yo metabolism. Also, I am feeling so much better, drinking VEMMA every day I think also has contributed to my body being prepped so to speak to begin shedding the poundage :)

 

I would love to lose a couple more pounds before we head up to NY for the week, would be nice to just have my clothes fit me nicer, yanno?

 

Last night for my supper, I made breakfast Flax Pancakes. They were yummy.  I made them in my GT Express cooker, man that thing is so handy! I decided that the next time I will make a double batch, and actually save the leftover to pop into the toaster the next day to crisp it up on the outside, cause in the GTE they are perfect shape and thickness to toast.

 

Flax-What's nice about flax is that it has a nutty taste, fiber cancels out the carbs, so you are getting 0 carbs that will raise blood sugars. ( ECC=Effective Carb Count)

Low-Carb Pancakes (Flax Seed)

(1 serving)

• 1/2 cup of ground flax seed meal
• 2 eggs
• 1/4 cup of cream
• 3 Tablespoons of cottage cheese
• 2 Tablespoons of oil or melted butter
• 1/4 teaspoon baking powder
  
  Simply mix together all the ingedients with a whisk - batter should be a bit runny. Cook on a lightly greased skillet as you would any pancake recipe. Drop batter on surface large spoonfulls.
  
  Cook until each side is lightly browned.
  
  Serve with butter and a low-carb store bought syrup. Or for an interesting low-carb topping, mix 1 Tablespoon of sugar-free jam with 1 and 1/2 Tablespoons water and microwave for 45 seconds.
  

 

So this morning I got a text message from Ellie at 5am. I woke up to the beeping at about 5:30am. I answered it and replied....turns out Ellie's extended family lives in Londonderry, NH....my old hometown. I lived there until I was 8. I thought that this was pretty cool!!! Which it sooo is!

Then I woke up for real at about 9:45am...had a craving for pancakes. So I made some...they were yummmmmmmmy!~!

After that I practiced my steel drum for about an hour. Now it's 11:11am

now I'm just chilling until I have to get dressed, drive to the CVG airport and pick up dad. His flight gets in at about 3:15pm....which means I have to leave at 2pm and I'll be back here around.......5 hopeully. I have to bid on those violins!!!


oh yeah...and it's 7/7/07 the luckest day of the year supposidly... lets see how lucky u get :)
