The Cocoa Bean is clingy as hell. I can't breathe without her either climbing on me or crying for me to pick her up. I hope she grows out of it soon! She's still cute and smart as a whip, though!

They came out okay, but I have to say that almond flour is as expensive as hell! That stuff cost $12.99 at Whole Foods!!!!! Why does it have to be so expensive to eat healthy? God forbid someone might want a healthy, low carb treat now and then. You just have to pay out the ass for it!

Finished product. The recipe said they wouldn't come out brown, but I still think I should've left them in a wee bit longer. They came out pretty tasty though. They're already gone!
I don't know what is cuter, the cookie bigger than her head or her blue eyes peeping out from over the top of it? I think it might be the fact that you can tell she is smiling even though you can't see her mouth.

I found a very easy recipe for Ginger Cookies. My daughter and her husband love this cookies and me too!!! I made them last Friday. They were eaten up in only three days.
Here's the great recipe:
Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons grated fresh ginger
3/4 cup butter, softened
1 cup white sugar
1/4 cup molasses
1 egg
1 cup white sugar
Directions
In a large mixing bowl, combine flour, soda, and salt. In a separate bowl, beat ginger, butter, and 1 cup sugar until light and fluffy. Beat in molasses and egg. Gently fold in flour mixture until just combined. Chill for 1 hour.
Preheat oven to 350 degrees F (175 degrees C).
Roll dough into 1 1/2 inch balls and then roll them in sugar. Place 2 inches apart on ungreased baking sheets.
Bake until edges start to brown, about 15 minutes. Centers will be slightly soft. Let stand on cookie sheets 1 minute and remove to racks to cool completely.
