Chicken Noodle Soup @ MindSay

What you will need:

1 whole celery bunch (approx 7 stalks)
4 medium carrots
1 head napa cabage
5 green onions
6 large mushrooms sliced (about 2 cups)
1/2lb snow peas
1 whole chicken
2T ground ginger
2 cloves garlic
2t Chicken bouillon
6 packs of ramen noodles (4 oriental, 2 chicken)

makes approx 20 servings.

This is a great recipe to make for a large amount of people or to freeze and make several meals out of.

Start by boiling your chicken in about 8 quarts of water. while the chicken boils you can start preparation on your vegetables, keep them separate as you prep them beause they will be added according to cooking time.

slice celery diagonally thin slices



Then carrots cut in the same fashion



nappa cabbage chopped



diced green onion mmm one of my favorites :D



mushrooms, I remove the stalks, but its not necessary.



Diced garlic mmmmmmm



place the snow peas into a bowl of icewater for later use.



remove chicken, set aside. skim fat and skin from stock, add garlic, ginger, and bouillon as well as flavor packets from ramen noodles and 4 more quarts of water.



peel and chop chicken into bite sized cubes



add carrots and celery to broth first, boil for 5 minutes



then add mushrooms, cabbage, chicken, and green onion, allow to cook for an additional 5 minutes



finally remove snow peas from ice water and add in ramen noodles



cook three minutes, and serve :)



add soy sauce to taste and enjoy






I like this recipe a lot because it tastes like it took a long time, but it really only takes about 35 minutes, it makes a lot and you can always freeze any leftovers for later use. you can also omit the ramen noodles and use rice or egg noodles instead. Ive even made wontons and tossed those in for a tasty wor won ton soup. :)

I'm going to try my hand at some homemade chicken noodle soup tonight.  I've got organic chicken, organic chicken broth, and organic carrots, celery, and mushrooms.  The only thing not organic is my egg noodles, but they're no cholesterol, low-fat, low-sodium "No Yolks ."  If this turns out as good as my spaghetti did last week, I'll have another recipe in my repertoire.  I can't wait.

Came down with a nasty cold this weekend, Mark's been great, he took care of me before and after work.  He then even though he knew he could get sick, snuggled with me and rubbed my back when it was achy. Then he went out and shampooed the carpets because I was sneezing so bad, and my allergies have been acting up.  He really takes good care of me.  He kept the dog from jumping on me and after working a long shift today, he came home saw that I was still in bed, and checked my head, he ran out got me some cans of chicken noodle soup and orange juice, plus yesterday he got me both daytime medicine and nighttime medicine, that way when I go to work tomorrow I had some to take.  He is great to me.  I love him with all my heart.  Some people would say those are the little things that count, but to me, those are bigger things.  I am finally feeling better, I got up around 4pm and watched "Something's Gotta Give" and had some soup and juice.  I feel a lot better than I did.  I have to thank him though, cause if he wouldn't be here, I wouldn't have gotten up to eat, or to drink anything because I was so tired.  He helped me become better.  Sometimes when we forget about these things and we think take these things for granted. I just wanted to say, that I am so thankful baby, thank you so much.  I love you with all my heart. 

you ever have a huge fight with your siblings and then you just regret everything you said and just feel like you hate yourself for... i felt like that last night. kenny and i had the biggest fight of our lives. we were screming so loud at eachother and my voice boxd hurts and so does my throat. i feel like being mean to albert right now cause i have so much to write about. my mom read another one of my notes to shaundra and i got so gaddamn pissed off at her. i left the house and went to rachelles and when she was going to pick me up, she couldnt drive into the driveway and couldnt come in and get me and then she blamed it all on me for not watching out for her because she's too lazy to do shit.
i just had the most yummiest soup, mj. bailey makes yummy chicken soup and i loved it. shaundras not here today. i dont know if its because of the tests or if its because she just doesnt want to come or if she sick or whatever. lizzy called me yesterday, it was so good to hear from her. i think ill take her advice and apply for edgecumbe and then if i change my mind, i will call them and tell then that i dont wnt to go. LIZZY: you need to tell me if youre going to go school here or over there cause i dont want to waste my time applieing. i dont know how to spell that. albert wants to go to AC, and i might want him to get me a soda again. my leg is falling asleep. one of those boys over there just farted like really loud. it was either sungwhan, justin crow, steven unin, or gordon street. now i smell some strong ass cologne. i wonder wheres the closest ATM machine? albert needs one. im just writing nonsense aint i? asld;kfasdklj;aasdfkljwodjalvnei

Well, I have decided that we are staying home and having Chicken Noodle soup due to tummy problems I am having. Rich said, he will take me out to lunch somewhere tomorrow when we got to the mall to get my birthday present. That works with me. Birthday celebrations in this family usually go on for a couple of days;) When Shanaha turned 5, we celebrated for like a week. We had a party with extended family, went to the zoo, SeaWorld, etc. It was a fun week:D I just wish I could have kept her 5 longer:)
