Baked Mashed Potatoes
This is my first food blog entry... I thought it'd be kind of nice to separate my regular blog from my food blog.  So this will just be a journal of sorts, for all the cooking adventures my husband and I have, along with recipes and photos!  I'm just hoping to inspire some bloggers to do more cooking, share delicious recipes, and hopefully get some good food conversations going!

So this evening, we still find ourselves on a tight food budget and trying to work with what we have, as opposed to our normal way of cooking: let's just go shopping for whatever we need!  Luckily, we are buying great versatile ingredients on our budget, and coming up with some tasty dinners, like the potato dish I made tonight!

The Baked Mashed Potatoes dish is very rich, and not friendly on carbs or calories, I'm sorry to say.  But if you're looking for comfort food and you want to get away from ordinary mashed potatoes, this is your answer!  The potatoes come out light and fluffy and the Asiago cheese gives it a crispy, golden crust on top!  The onion and garlic add tangy deliciousness, the chicken broth gives it a deep, savory flavour, and cream cheese makes it rich and creamy!

Baked Mashed Potatoes
3 pounds potatoes
3/4 medium yellow onion
3 cloves garlic, minced
1 8-oz package cream cheese, softened
1/4-1/2 cup chicken broth
1 egg
1 tablespoon dried thyme
1 tablespoon dried oregano
1 teaspoon paprika
salt and pepper, to taste
1 cup shredded cheddar cheese
butter-flavored non-stick cooking spray
2/3 cup shredded Asiago cheese

Preheat oven to 350 degrees.

Peel and chop potatoes, placing chunks into large pan.  Add cold water until about 1" above potatoes.  Add 2 tablespoons of salt.  Bring to a boil.  Cook until potatoes are tender when pierced, about 15 minutes.  Drain.

Grate onion (or use food processor to chop fine) and mince the garlic cloves. 

Transfer potatoes into a large mixing bowl and add onion, garlic, cream cheese, chicken broth (to desired consistancy - may not need 1/2 cup), and egg.  With an electric mixer, beat on medium speed until all ingredients are blended.  Then continue to beat while adding thyme, oregano, paprika, salt and pepper.  Add small handfuls of cheddar cheese and combine.

Spray the inside of a 2-quart casserole dish with non-stick cooking spray.  Spoon mashed potatoes into casserole dish and spread evenly.  Sprinkle top with Asiago cheese and bake for one hour at 350 degrees.

For a Sunday, I shall say this one was tolerable.

I had to go to my nana's even earlier than usual - QUARTER TO FUCKING TEN.

Really. Why.

 

Either way, I scoffed some Ryvita and processed cheese slices for breakfast when I got there - I'd basically got up, flung on all the clothes I wore yesterday (even my underwear...), packed up my GameCube and went out.

This cheese was also only SIX PERCENT (6%!!!!!) cheese, so I don't suppose you could really call it cheese.

 

I reverted back to my old ways (and I'm annoyed about it now), deleted an old save and started a game again. Sonic Adventure 2: Battle this time - I deleted my old save of 147/180 emblems - played it for a few hours and I've gotten around 30, so... Not TOO bad.

 

I played through the Claire A scenario on Resident Evil 2 on the Arrange setting.

I aimed to beat my old score that I got for Leon A - which was under 2 hours with 2 saves.

Claire's story IS considerably harder - so I finished with a time of 2 hours 40 minutes, but how many saves?

 

Not one...

Not two...

Not three...

 

NOT ANY!

I started on the Claire B scenario after I'd eaten Sunday lunch.

I'm not sure how long I've spent on it - but I had to save it before mam came to take me home.

Mint timing actually - saved it and turned it off about 5 minutes before she turned up.

Came home - got into my bed and laid there for fucking ages doing fuck all.

I eventually turned on some King Diamond and had a read through my Heavy Metal Thunder book.

 

Best fucking book I've ever bought that. Truly.

The inner sleeve says £14.99, but I only paid £5 for it.

 

I'm going to download a lot of these bands featured in here.

I loved going through it for the first time - poking the albums covers and going:

 

"Yeah, got that one. Oooh, that one. OH MY GOD KING DIAMOND?! Yeah, got that. Hee hee, Slayer. ...OH MY WHAT?! RAMMSTEIN! FUCKING YEAH! THIS BOOK IS THE BEST EVER!"

 

And with iTunes - the sexy feature of listening to 30 second samples in the store - I can test out a song before I download it. :)

 

I'm going to start with The Handsome Beasts.

I had a listen to a few of the songs, they're pretty good - but the cover art is fucking legend - check this bitch out:

 

 

It's fucking hilarious. :D

Got to respect him. Rofl, if I had the courage to pose naked in a pigsty on an album cover, I'd be the greatest person in the world.

 

(Rofl, the site I found the image on voted it on the top 24 worst album covers - but HMT vote it as one of the best. I go with the latter's opinion.)

 
 
 

   
My Favorite Cracker... And Antiqie Hubbies
Been a few interesting days to the beginning week of the New Modern Calandar!

We headed back to TKD. How sad is it that us three and another lil boy whom is the orginal ranking we should be missed the whole month of December, and we are at the same level as those that haven't missed any class? Does this make us good? Or does this mean we actually practice at home? I told the lil guy's granddad that it means both! I pissed off Mr. Johnson. Flately out told him we weren't doing this month's tournement. I am planning a suprise 40th birthday party for Randy. I am not spending out 120 bucks on registration fees for two kids even if I get in for free then. Also pist him off by missing Saturday's class. I don't drive on bad roads. I won't if I don't have to plain and simple. TKD is not a NECESSARY. And we had an ice storm come through Saturday. Radio was full of three states' various counteis and state patrol telling people stay off the road!

This weekend I have been laughing my ass off. I have had a craving for a specific cream cheese dip for crackers. Been making it since before the holidays. This past weekend I made the last bit of it and I was sitting on the mudporch having a cig. The kids brought out a few different crackers with the dip on them. And this is what came out of our mouths:

Coltin: "Mom what's your favorite cracker?"
DeLaney: "Did you just ask who is your favorite cracker?"

Me (laughing): "Coltin your my favorite cracker!"
DeLaney: "MOM! You can't say that!"
Coltin: "NO! Mom, I said what is your favorite cracker NOT who is your favorite cracker. And why can't she say I am her favorite cracker?"

The boy had never heard of a white person being called cracker but DeLaney has. She has been called Cracker Bitch while down in Texas so she knows it can be used as an insult. So I explained to him why calling someone cracker can be an insult.

I told Randy about that and he burst out laughing. He gave Coltin a lovin arm punch and said: "Boy, your mom has it wrong! I'm here favorite Cracker!"

And low and behold later that day I was on myspace looking at various bumper stickers and I came across one that has a picture of a saltine cracker and the words around it said: "Your favorite cracker!"

Later that evening we watched Firstblood. Much to Randy's displeasure. I guess he has never been a big fan of Rambo.

The next night the same tv station was running Firstblood II and I wanted to watch it. Randy threw a man fit over that! Again we were on the mudporch and I was putting in my arguement of watching Rambo again. This is our conversation!

Me: "How come your being a baby over watching Firstblood ii?"
Randy: "Cause I don't want to watch an old ass movie! Is that okay with you?"
Me: "No it isn't okay with me? What's your issue with Rambo?"
Randy: "Hell the movie is 28-30 some years old! It is an old movie!"
Me (with evil grin on my face): "It's vintage! Like me! What's your issue with 30 some year old things? Is it cause we are younger and in stlye compared to you?"
Randy "Watch yourself! Next thing your going to be calling me........"
Me (with eviler grin):: Antiqie!


Hehehehehehehehhe the man is on pins and needles trying to figure out what I have up my sleeve for his 40th birthday on the 31st of this month! Muahhahahhahahahahhahahahahahaha

Anyway been busy. The kids started their new school yesterday and enjoyed it. I start pool tonight. Hopefully Randy brings home the two new truck batteries so he can run those into the mechanic and find out what else we have to get for the fucking FORD truck to get it running again. I buy my book this week and my class starts next week.

This cracker is off to giggle a bit more over the word usuage in my home for a while longer!

so anyways, my buddy Xavier xavier is doing this project called the cheese. Yes, I am a fan of the cheese. Although nothing much has been done with it yet, I know fershure its gonna be awesome. Okay!! time fer some fan art!!

Dinner time
This past weekend, our family went to camp with the youth group that we volunteer for. Typically I end up packing veggie burgers and the like for Av to eat. We have been staffing long enough that we've memorized the menu. Meat dinner on Friday night, deli lunch on Saturday, and a lasagna/pasta dairy dinner that night. Breakfast is always easy, but the others can be trickier because as I have mentioned before - he likes what he likes. So after one fateful week long convention where Av got sick from eating too many apples, I started bringing food that I knew he would eat.

This weekend though, we arrived at dinner last night to find out that it was not lasagna, but veggie taco night! As soon as I saw the cheese and tortillas I knew that we were in business. To say that our son loves quesadilla would be a HUGE understatement. So Av and I set out to make one of his favorite meals. He was thrilled, and I could put the food I brought for him back in the fridge. Towards the end of dinner, as he was finishing up his tortilla chips and extra cheese, I see them setting up the ice cream sundae bar.

I say to Av "Wasn't dinner great? What do you think would make this dinner even MORE awesome?" with thoughts of chocolate syrup and sprinkles dancing in my head. He thought about it for a few seconds and replies "More cheese?"
