I couldn't stand it, I had to try to replicate our lunch from St Thomas.
Let's just say they're in no danger of me opening a competing restaurant anytime soon... The curry chicken was the real deal from scratch, so be impressed, OK. The beans and rice weren't quite right for me. Maybe because I don't like red kidney beans and that's what the recipe called for, so that's what I did. I usually do a recipe by "the book" the first time around and then tweak it here and there subsequently. Fried plantain is going to take more practice, I think. They weren't bad, but they weren't "right" if you know what I mean.
We need to figure out where we're going for Thanksgiving or if I actually want to cook something. If I cook, I'll be doing what I've done over the years when we didn't live in the same area as our families. I shouldn't stress out about that, should I? I know there is know predicting what my outlook is going to be on the day, so I'm trying to cover all eventualities. Maybe Marie Callender's is open...
