I am back from the panhandle of Nebraska. It was quite the trip! Thank goodness it was short. I had my fill of travel earlier this year and late last year, and I was glad that this trip not only went smoothly, it ended early too. I got some cool pictures of the Nebraska area around Scottsbluff, and some even better ones of Denver and the Rocky Mountains (thanks, Ryan!)

 

While I was in 'Husker territory, I had my first ever Runza! It wasn't half bad, though a steady diet of them would keep me in the bathroom or allow me to make enough noise to found my own brass section for some needy orchestra. Whoo!

 

There was another place, best described as an 'upscale hole-in-the-wall' called the Emporium that I would highly recommend if you ever find yourself in the panhandle of Nebraska on the way to either Denver or Cheyenne, WY. This food rocked! And it's well-priced too! I had what they called 'Amber Chicken', a prosciutto-wrapped solidly-peppered chicken breast with a rice-and-mushroom side and steamed vegetables. We also had this smoked salmon appetizer with whipped wasabi, mmmm, it was good. And they serve Goose Island beer! From the outside, it looks like some older couple's house that's been heavily landscaped, but inside, it's a converted house, old wood floors and walls, nice ambiance, really a classy place in the middle of nowhere. This was dinner on Thursday night.

 

Friday afternoon, I had a pulled pork sandwich at another little place that reminded me of my grandparents' place in Wisconsin for some reason. Or maybe it was the effect that Scottsbluff was having on my memories.

 

In Denver, to catch my flight, I ate at the Macaroni Grill just outside of Aurora. Had some bowtie pasta, spicy red sauce, parmesan-encrusted chicken, mushrooms, roasted garlic (which I'm still paying for) and artichokes. Yum! But filling. OOH man, was it filling. Eating a bunch of those garlic pieces, I was afraid I was going to sweat garlic for a day or so. We'll see! But the brass section got some extra instruments and performed all night long. Thank goodness it was a private performance.

Nice to know you're a foodie too.  You may want to check out tattooedjen 's blog, she and her hubby cook up some amazing food and post a lot of their recipes.  She's actually a Chicagoland native as well, but she's in northern Cali. now.

I was toeing the line between gross and funny. Seems I did well! Yeah, I have my favorite foods (mom's lasagna, dad's Italian beef) but I'll try anything once. I may not like it, but I'll try it. I have my grandmother's take on food. She tried anything that was put in front of her. Even though she wasn't my biological grandmother, I do take after her in a few respects.

Oh my goodness, compared to some blogs, your post was no where near TMI.

 

Yeah, my problem is that the list of foods I don't like is a lot smaller than the list of foods I do like.  Why'd you have to go and mention Italian beefs, I miss Chicago Italian beefs soooo much.  I mean you can get something close to one here in Phoenix, but it's just not the same...

LOL See, I don't eat Italian beef from the restaurants around here. My mom and dad make this killer beef that my college buddy, who is very selective when it comes to this sort of thing, specifically requests my parents' Italian beef when he comes home for Christmas. And he gorges on it too. LOL

 

Yeah, even Chicago-style pizza isn't the same outside of the City limits. I'd rather send friends care packages from here than try and find something out there. Actually, that gives me a great idea! Thanks!

 

I was worried that with new people that I meet on here, talking about bodily functions w.r.t. food might not be the best impression, but oh well, this is my blog, so there. Hehe!

One of the first stops for my husband is Portillo's when he lands in Chicago.  I have gotten care packages from friends and family in Chicago, but it's just not quite the same.  Now, the pizza we don't miss as much because neither he nor I are big Chicago style pizza fans, we prefer the thinner crust, like Home Run Inn or Lena's pizza, and we found one little whole-in-the-wall joint close to us that hits the spot.

 

I've been on Mindsay around 4 years now, I think.  I started out with my daughter's blog, sarahbethmom and she was 2 at the time and since it was her blog I started out very mellow and tame, all rainbows, puppy dogs and sunshine, and then I got the itch to start my own blog, and well you've seen it, there's nothing tame, mellow, or puppyish about it, lol.  I've met some great people here, and it can be a lot of fun.  I try to avoid the drama, it's amazing how suddenly you can find yourself feeling like you're back in middle schoo, and I generally try to keep my blog fairly humorous and light and fluffy.  There are thousands of users here but it really is such a tight community sometimes.  I've met some great people here.  It's best to just jump right in and join the fun.

Glad your trip went okay. This is so weird, I grew up in WI, and live 40 mins from Denver. So all the things your talking about, I could picture or have been to. Crazy world.

That is funny! My mom grew up outside of Eau Claire, so all the trips to WI were to that neck of the woods. And the two times I've been to Denver (I don't count the time I transferred through Denver) I've never really seen much of the city, but this time I did take some pretty cool shots of the area.

 

What stunned me the most though, wasn't the scenery, but the fact that as my coworker and I were driving along, we passed no fewer than 11 missile silos out there in the countryside. That was wild. I even got a drive-by picure of one of them. I guess also they move missiles around too, to keep rogue nations guessing?
