So, Irish Cupcakes = rousing success. At least to my tastebuds.

Though I cheated from the recipe and used a Devils Food cake mix and storebought vanilla icing. Shhh, don't tell anyone 'kay? And what transports these little beauties to the Emerald Isle is the splash or two (or three) of Bailey's into the icing. Oh, yeah.

Plus, there's some icing leftover. And I also have some animal crackers somewhere. Put those together and what do you get? Grown-up Dunkaroos!

They are amazingly good and so, so easy. I followed the package directions for the Devil's Food cake mix and sprinkled some mini-chocolate chips into the batter before pouring into the baking cups. While the cupcakes baked, I spooned out the icing (creamy vanilla) into a bowl, poured in a few splashes of Bailey's, and beat with an electric mixer. Voila!

I figured it'd be okay... I mean, how much Bailey's can be in approximately two tablespoons of icing?

I'm going to call Canon tonight. Didn't get a chance to last night since I went grocery shopping and was cupcake baking. Keep your fingers crossed for me...
